Can anyone tell me the maximum milling allowed on a Palmer 27 head?

Kent,
Send me a pic so we can decide if it is a Salt or fresh water engine. If it is salt milling is most likely pointless.
Also can you take a pic of the to of the cylinder showing the water passages?
As to how much can be milled there isn't a spec. However this being said you have to make sure the valves won't hit the head after milling.
